Named for Tennessee Williams’ personal favorite of his plays, Cat on a Hot Tin Roof, our signature restaurant has led the way in describing the intangible “Key West Cuisine.” Suffice to say that to taste it is to know it. It is to be anchored in this place, with views and ocean-scented breezes as additional seasonings. Flavors feature Cuban and Caribbean cuisine aspects, local ingredients like seafood, and seasonal produce from mangos to tomatoes. Fresh flavors with fruity, chargrilled, peppery, and oceanic dimensions at play build up to something that is truly original. It’s anything goes, combined with the wisdom of our expert chefs. Only what celebrates the ingredients prevails, no more, no less. The result is as simple as the beauty of Key West itself.

Hot Tin Roof offers a gorgeous dining room with teak wood, hand-painted ceilings by late local artist Jeff Beal; plush banquettes, and a verandah overlooking the harbor and the world-famous sunset. At glow hour, the space fills with a cinematic, romantic light that will take your breath away. Hot Tin Roof has netted leagues of loyal diners, including locals, and reservations are strongly suggested. Indoors or out, you’ll grasp the magic from the moment you take a seat, and remember it forever.

Hot Tin Roof Lounge offers an innovative cocktail menu, with drinks inspired by the writings of Tennessee Williams and other locals. Try our signature cocktail, the Hot Tin Tini, with vodka-infused fresh pineapple. Or our Hemingway Daiquiri with locally distilled rum. Enjoy a brilliant selection of small plates designed by our chef before joining us for dinner in the dining room. Or stay in the lounge for the full dining experience. Not only does the view offer a premier panorama of the harbor, but you’re perched only one tier up from the energy and music of Sunset Pier, in the best of both worlds.

Our Executive Chef, Scott Maurer, is forever balancing the creativity and possibility of Key West cuisine. Since 1993, he has devoted himself to resort dining, working in top destinations to give his guests iconic, unforgettable experiences. His life’s work is to represent unique places on unique plates and menus.
Experience also builds wisdom and restraint, and Chef Maurer’s dishes are as much about what’s present as what’s not. Every ingredient is added with intention, which is why you remember it. There’s travel in each bite and elements that are distinctly Key West. Like a sunset that’s fleeting but dramatic, a meal by Chef Maurer will linger in your memory.
