Our Executive Chef, Scott Maurer, is forever balancing the creativity and possibility of Key West cuisine. Since 1993, he has devoted himself to resort dining, working in top destinations to give his guests iconic, unforgettable experiences. His life’s work is to represent unique places on unique plates and menus.

Experience also builds wisdom and restraint, and Chef Maurer’s dishes are as much about what’s present as what’s not. Every ingredient is added with intention, which is why you remember it. There’s travel in each bite and elements that are distinctly Key West. Like a sunset that’s fleeting but dramatic, a meal by Chef Maurer will linger in your memory.

Charity Maurer – Pastry Chef

Charity Maurer’s passion for pastry was not a planned career but was derived from an interest in learning to bake bread. That dedication and desire to learn led to attending culinary school where a love for creating decadent pastry and desserts grew strong. Charity began her career as an intern at the Hyatt Regency Grand Cypress in Orlando, Florida before advancing to a pastry cook. Her move to Key West was highlighted by a new position as Sous Chef at the wildly popular dessert restaurant, Better Than Sex. She enjoyed great success there, resulting in a move to become Pastry Chef at Tavern ‘N’ Town restaurant. Her talent was highly sought after on this island of admitted “foodies”. Happily, Ocean Key Resort was able to lure her away to lead its pastry program at the island’s most successful fine-dining restaurant, Hot Tin Roof. Charity is a respected member of the culinary community and continues to thrive at the stunning waterfront restaurant. A personal favorite and ever-present ingredient she loves to showcase is the versatile staple with a heavenly scent – the vanilla bean. Behind each delectable creation is a passion for making guests smile with her desserts and ensuring each bite is unforgettable.
